Cut Out Sugar Cookies

Brad is a sugar cookie lover in our house, but I have cut back on making them since he is diabetic. Well I still make them for special occasions, and currently I am making them to test icing them for Melody’s third birthday coming up. Well this recipe below is my favorite for making cut-out cookies. This website also has an icing recipe, but I will include that later once I perfect mine, ha!

Ingredients

  • 1 cup of softened, unsalted butter

  • 1 cup of sugar

  • 1 1/2 teaspoons of vanilla

  • 1 egg

  • 2 1/2 cups of all-purpose flour

  • 3/4 teaspoon of baking powder

  • 3/4 teaspoon of salt

Instructions

1. Combine butter and sugar in a stand mixer until creamy

2. Add egg and vanilla extract and continue to combine. [Be sure to scrape the sides of the bowl]. In a separate bowl mix together flour, baking powder, and salt. Then slowly add to the wet ingredients until well combined.

3. Separate dough into two halves and cover with plastic wrap. Then refrigerate dough for a couple of hours.

3. Flour a surface and add dough (work with one half at a time). Roll dough about 1/4” thick and cut into shapes. Add the cookies to a greased baking sheet.

Melody loves to help, but hates to eat these cookies, ha!

4. Bake at 350 for 10 minutes, and let cool! We added sprinkles after the fact, or you can do it before baking. Or you can let them cool COMPLETELY and ice. I’ll blog about my icing later, ha!
