Chicken Lettuce Wraps
I found these wraps in the Noom app way back when I was doing Noom. I did make some adjustments to their recipe to better fit what I had on hand and what I prefer (I am not a mushroom fan for instance).
Ingredients
Package of instant rice (I use the 90 second microwave pack from Walmart)
1 tablespoon minced ginger
6 cloves of minced garlic
8 oz of ground chicken
Bibb lettuce
Bell Pepper (I did a trimix)
1 tablespoon soy sauce
1 teaspoon brown sugar
1 jalapeΓ±o
1 tablespoon lime juice
Instructions
1. Mix the garlic, ginger and ground chicken together. Add to a skillet over medium heat. Cook until down (around 5-7 minutes).
2. While the chicken cooks, cook rice according to the package. Set aside. Then dice the bell pepper and jalapeΓ±o. Lastly, whisk together the soy sauce, brown sugar, and lime juice until the sugar is dissolved.
3. Once the chicken is cooked, transfer to a bowl. Add the soy sauce mixture to the chicken and mix together.
4. Return the skillet used to make the chicken back to the stove. SautΓ© the peppers and jalapeΓ±o for around a minute or so. Add to the chicken mixture and mix.
5. Now assemble the wraps and serve!
