Whenever we take big vacations (primarily Disney trips), we tend to have some sort of "countdown". We vary when we start this countdown, but it is always something fun. Below are a few of our countdowns for trips. Hopefully they can inspire you and your family!

Whenever my mom and I cruise, we try and make an effort to take a cruise that has a stop at Half Moon Cay. Unfortunately this does not always work within our time frame or plans. However, when we do get the opportunity to go to Half Moon Cay, we ALWAYS rent a small cabana. The cabana rental is by far the one excursion we will always do and that we feel is worth every penny.
So Brad had this brilliant idea many months ago to make something called Salsa Fish. In his mind, he thought we should bake some tilapia that is covered in salsa. That's it. Well I had another idea in mind. So we tried both. Needless to say, his idea didn't turn out so well. First, the fish did not really absorb much of the salsa flavors. Second, while baked, the salsa slightly changed flavor itself. So it just didn't turn out quite how he expected. So below is my version of Salsa Fish. Enjoy!
A few years ago, I found some really neat Star Wars sandwich cutters, and I bought them for Brad for Christmas. We are still on the look out for any cute sandwich cutters to use for his lunches. We actually found some Disney ones at Walmart. I don't do this for every lunch, but it is a nice surprise for him to get on occasion. Below are the sandwich cutters we currently have and the outcome. FYI-they can also be used as cookie cutters!
