Crispitos
My FAVORITE school lunch was crispitos! I loved to cover them in cheese, and their crispy, meaty goodness was amazing! Even after I graduated, we had a Chevron station that still served them. Well then my parents moved from my childhood home to another city, so I never went back to that Chevron. (It actually turns out that Chevron switched ownership and their menu!) Well I have had zero luck in finding these at other gas stations or even Mexican restaurants. The other day I decided to attempt making my own. We had some leftover taco meat and fajita shells, so why not?!? Check out my attempt below.
Ingredients [Makes 2 servings]
Taco Meat - I used some leftover that was already seasoned. I had about half a pound left over.
Soft Shells - I used fajita size and flour tortillas [see my suggestions below]. I used 4.
Preferred Toppings - I used cheese.
Vegetable Oil - For frying
Instructions
1. Fill a frying pan with vegetable oil. [You want to cover about half of the shells when rolled up.] Heat on medium-high heat.
2. Take each shell and fill it with meat, a couple of spoonfuls.
3. Wrap each shell and secure with a toothpick.
4. Place each one in the hot oil.
5. Fry for about 30 seconds to a minute (you want a crispy shell), then flip. [see suggestions below]
6. Remove from oil and place on a paper towel to remove excess oil.
7. Serve!
***Suggestions - So after attempting this, I must say, it was almost identical to those I remember growing up. However, next time, I plan to make a few changes. See below.
- Use corn tortillas if you can, but make sure to cook them before filling them with meat. The flour tortilla is just a bit more "doughy" than I remember them being. I read online, and apparently a lot of other people use corn tortillas instead. However, I think flour ones work perfectly fine if that is what you have on hand!
- I would try and fry all 4 sides. I only fried the bottom and top because of the toothpick and amount of oil I used; but I think if I had used more oil, I could have fried all 4 sides much better, and it would have been crispier.
